The Best Recipe in the World

Had to share this with you all. It's rare to find a recipe that tastes awesome, AND it's economical AND easy AND super healthy! I got it awhile back from the newspaper and altered it just slightly. It's nice to have a go-to meal that you don't have to thaw something. We eat them a lot for lunch, the kids love them. Cottage Cheese Pancakes Beat 4 eggs, add 1 cup cottage cheese, 1/2 cup whole wheat flour 6 tablespoons of coconut oil (or other oil/melted butter) and a few tablespoons of honey or other sweetener. Fry 'em up and enjoy! They are mouthwateringly delicious with PB and honey spread over them, or cream cheese. They are high in protein too. Kind of a crepe-like pancake. On a sad note, my grandpa (the one we call Bedstefar) suffered a major stroke over a week ago, and has recently come down with pneumonia. His time on earth is very limited. We are all very sad at the turn of events, since he was improving and we were hoping for a comeback for our always-strong Bedstefar. But as far as death goes, it doesn't get too much better. He is a believer and will definately be with the Lord when he passes. He knows it's his time, and I think everybody is prepared. He enjoyed great health up until the time of his stroke, and there has been time for all their kids and a handful of grandkids to say good-bye. We will really miss him. He's almost 89. Please keep him and his wife (Elmer and Joy) and the rest of the fam in your prayers. I'll keep you posted.

Oh Sweetie, we'll surely be praying for your gpa! What a blessing that he's been so healthy this long! But...no matter what, you will miss him and that's a fact! Praise the Lord he's one of HIS own...that makes the goodbyes so much easier!

The "cakes" sound great too! We have pancakes quite a bit on a cold winters eve...something that is hard to imagine right now, but will be here before we know it! Thanks for the recipe!

We have sure been thinking of and praying for your Grandpa and family these last days. We are so thankful that he will be well ..with the Lord and know the hard part is for those that will be left behind!

I am going to jot that recipe down, too. They sound great! I make that egg/cottage cheese casserole that sounds very similar!! Thanks for sharing it!
